I always look forward to new recipes and after making Dominican coconetes last year (shown here), I decided that I would continue the coconut streak. If you like soft, buttery cookies, these are for you. An alfajor is essentially two very buttery cookies sandwiched between dulce de leche rolled in coconut flakes and topped with powdered sugar, also known as a dulce de leche cookie sandwich in English. I’m assuming people liked them, because they were gone in minutes. This recipe is definitely a keeper, but I’ll probably throw in some clove and cinnamon into the batter next time.
