I think breakfast was a meal I never dared to skip as a child. Thankfully, my mom trained me to eat it every morning and now it’s a stuck habit. Though I love eating savory breakfasts, sometimes I crave something sweet. I always told myself muffins were really just an excuse to eat dessert for breakfast. These raspberry chocolate chip muffins (recipe here) satisfy my sweet tooth with just enough chocolate chips laced throughout the moist muffin batter with bursts of tart raspberries in each bite. The crunchy crumble topping which we added old fashioned oats into for more texture make the whole muffin extra delicious and trick my brain into thinking it’s actually “breakfast”.
