Last week a fellow employee baked an overflowing batch of Southern teacakes for a company event and after asking, she graciously shared her family recipe with me. I loved them so much that I made them the day after. As far as I’m aware, teacakes come in a variety of forms depending on the country and because I had never tried them before, I was pleasantly surprised by the texture of this version. Part cake and part cookie, teacakes are quite dense and the uplifting hint of lemon in this simple recipe is the perfect addition to these round pieces of perfection.
