Being one of the first things I learned how to cook, pasta remains one of my favorite comfort foods and bolognese in particular has always been at the top of my list. It’s versatile and has a way of combining classics together into one perfect sauce. The key is in the red wine and the tomato paste. Tip: I find that slightly under-cooking the pasta and and letting it continue cooking after draining ensures that it’s al dente. (Recipe here)
